<p><strong>江魚美既摩登又謬思   形象大使 RITA 體現擬人化的美好餐廳詮釋</strong></p>

<p>江魚美的名字似一位美人的化身，這是創辦人暨形象大使RITA想要傳達的經營巧思<span style="background-color: initial;">。江魚美一二樓空間裡，二樓包廂區鏤空牆面搭配玻璃延伸的街道樹綿延不絕，不但視野開闊更保有私密而獨立的空間景觀。這與RITA大學學得企業管理、留法時期進階採購有關，RITA對美的空間與設計更有一套獨特心法。保留前屋主一甲子的古老花磚璧貼與現代工藝馬賽克相互烘托，漸進式呈現高大尚的摩登立體感。加上精心鋪陳的兩面網美牆，讓人忍不住就會想往那捕捉瞬間美麗，拾階而上的樓梯光影，恍若坐上時光隧道體現美好年代，可以感受到過往歲月淬鍊下的大宅門風景。</span></p>

<p>為大宅門定製的電梯更是另一謬思<span style="background-color: initial;">，RITA 希望整體感除了體貼入微為銀髮族和襁褓中的孩童設計之外，特別重視</span>私密感、燈飾厚紙布紋路、條燈像似行雲流水、樓高挑高近四米的各種木頭雕工<span style="background-color: initial;">，看得出來</span>從歐美與日本手工製作。既保留了大戶人家的老基底作<span style="background-color: initial;">，更凸顯江魚美餐廳的氣質味道。</span></p>

<p><span style="background-color: initial;">除了店景獨樹一格，餐飲也是頗具米其林規格。葉祥乾主廚來自屏東16歲國中畢業就全省餐飲跑透透的勤學廚藝。曾在桃園桃源小館深受川湘大廚薛石柱的帶領，台中小吃攤起家的紅油抄手「周抄手餐飲品牌」更是他的廚藝養成，其他如高雄辦桌小吃松柏飯店、東亞大飯店川菜、渴望會館酒席主廚，與外省師傅交手多回並依序習得寶川、岡山豆瓣醬的運用得宜，葉祥全主廚與中華美饌交流協會翁茂安大廚更是換帖的好兄弟。</span></p>
<p><span style="background-color: initial;">攤開江魚美中式餐廳，若說左手是川菜拿手、右手上海菜本事，隱藏版菜單肯定是葉祥乾主廚不能說的秘密。中和太陽餅尺寸的金芋鴨方酥，小塊鴨方掌握訣竅，在麻辣酸甜鹹生香的七滋八味九雜中，烹調出家的好味道。金華火腿砂鍋白菜燉雞湯如開水白菜般清湯掛水，珠貝、家鄉肉、豬腳煲湯2.5小時吊湯靈魂，濃縮再濃縮的精華，梨山大白菜五六片便是絕美好湯。RITA更對湯鍋的二次利用給出小撇步，把殘羹菜餚包回去，加入關廟麵與雞蛋，蔥或花椰菜一把下就是家的味道。</span></p>

<p>而川香口水雞中的油潑辣子更少不了花生烘烤壓碎<span style="background-color: initial;">，光</span>油潑辣子可以復刻川府蓉渝菜單裡的各種四平八穩菜色<span style="background-color: initial;">。葉祥乾</span>主廚推薦不到十道菜<span style="background-color: initial;">，但</span>每一道都十足的用心。冰鎮芥末中卷雖屬於夏天涼菜，卻有一種中日洋食滋味<span style="background-color: initial;">。清燉揚州獅子頭、</span>杭州祖傳東坡肉、孜然生爆鹽煎肉，前者考驗的是主廚底子<span style="background-color: initial;">，葵花大斬肉的工夫與刀功了得加上底蘊</span>；後者則運用十足鑊氣，醬爆回鍋肉是彩椒<span style="background-color: initial;">、豆干片菁華</span>就很美味，撒入孜然就是雙味感受。菜單鋪陳將近5-60道。花椒鐵鍋蛋源自眷村老燒蛋，運用花椒油爆香的蛋滋味<span style="background-color: initial;">，始終令人念念不忘。</span></p>
